Good day, my name's Nicola, and I want to publish a listing on ebay.it (the Italian eBay site) but I can't choose the option "Italy" from the eBay site menu; as I've seen Auctiva utilised on the Italian site, there must be a way: is anybody able to help me, please?

You currently can't list directly to eBay Italy from Auctiva, i.e. not a supported site. The list of supported sites is on the HELP link in the FAQ:

I would guess the listings you see are on another server, like US or UK, and showing on Italy due to "Ships to Worldwide" (or similar) as option in the listing. Item Location for the listing should reveal that situation.
