Hello...can anyone tell me if our DSR's are affected if a buyer rates just 1 or 2 of the 5 ratings and leaves the others blank? Does the ones they left blank lower the DSR?

No, if a buyer leaves them blank (doesn't fill them out) it won't affect them in any way, they will stay the same. Alot of people think they're a PITA and never use them anyway. Even if they only fill out one or two, those 'categories' will change accordingly but the others will stay the same.
