I need to purchase insurance for an item I need to ship. However the item will not show up in sales> transactions. It is the only one not there.
Any suggestions will be appreciated.

Unfortunately, you'll have to file a support request (bottom of the Help page) and ask them to purchase the insurance from the back end. Just be sure to give them the pertinent info (item number, amount, etc.).
