Yep, if you disable Auctiva checkout, any listings posted thereafter will go through eBay's checkout. However, listings that were posted through Auctiva while Auctiva checkout was enabled will still go through Auctiva checkout.
Once Auctiva's checkout has been disabled, you can designate the insurance in your listings by simply entering the insurance cost in the appropriate field in the shipping tools section of the lister page.
The method of insurance is up to you. If the customer buys insurance, you will receive the specified amount and you can purchase the insurance however you like.
If you are not using Auctiva checkout but would still like to purchase Auctiva shipping insurance, you can do so after the sale by clicking the "Purchase Insurance" link next to the item on your Sales(tab) -> Transactions page.
