Why is it if I want to change my seller details, instead of going Profiles/Seller details and selecting one of my existing sets, the interface drops me into the creation of a new set? I would rather the seller details management be the default page, since I edit my details a lot more than I create them.

Click on the Profiles Tab and then click on the 'Manage Seller Details' link at the bottom right. That will take you to a page that lists all your available SDs so you can edit them.
