Since you have changed your scrolling gallery color scheme back to the red design in your account preferences, any new listings that the scrolling gallery is added to after you made that change should have the scrolling gallery with the new color scheme added to them. However, the scrolling galleries that are already present in your listings will remain unchanged.
If you wanted to update the color scheme of the scrolling galleries in your active listings that already contain the blue design, you would actually need to remove the old scrolling gallery HTML from the description HTML of each listing using eBay's "Revise your Item" form. You could then ask our customer support team to add the scrolling galleries to your listings again and the new ones that are added would reflect your new color scheme.
While that probably more trouble that it is worth for most users, if you are interested in doing this, it may be helpful to know that the scrolling gallery HTML you would need to remove from each listing begins and ends with HTML tags that look like <!--ASW-->
