I've noticed the store templates only cover about 60% of the screen area. It looks cramped, scrunched up, and IMO, unprofessional. Anyone else have this problem? And apart from paying to have a custom solution, are there any obvious ways of alleviating the problem?

Yeah, a lot of the store templates are designed to fit within an 800x600 resolution, which is getting narrow these days. That used to be the standard size to shoot for since a fair percentage of web users still had that resolution, but more recently 1024x768 has become the standard. Sorry to say there aren't currently any flexible or customizable layouts, but in the meantime, the templates i<3 Store, Slick, and No Frills are designed for 1024.
I'd disagree. Your website, like mine, covers about half of the screen. The rest is filling. In your case, it's snow. In mine, just color. The actual content is crammed into a thin band down the center. I stick with my original comment about this problem ... it looks unprofessional! And desperately needs someone at Auctiva to spend some time on the templates and bring them into the 21st century.
