Are there alternatives to UPI?

I was wondering if there were any other alternatives to the unpaid item reminder?

For example, if you set a policy that customers must pay within X number of days or the item will be sold to someone else... Can you _just_ do that? Or do you have to follow through with the UPI in every case?
