EMAIL TEMPLATE ~ How to Create, and Use?

I want to create an email template that I can send to buyers who have paid me ~ to say: Thanks, I received your payment, will ship today. I want to call this email template “Thanks, will ship today.”
Then, as the buyers pay me, how can I display the list of closed auctions, and mark all the ones who have paid, and send them this email.
