Profiles include the categories at the bottom of your template with the checkboxes (Marketing Tools, Shipping Tools, and Checkout Options), and Seller Details includes the text that shows up at the bottom of your listing, in the template (Payment, Shipping, About Us, Contact Us, etc.).

You can change the individual Profiles, Master Profile (which is a set of individual Profiles), and your Seller Details from the Profiles tab - just click on the Manage Profiles or Manage Seller Details links and it will take you to what you have already written, which can then be changed. If you want to create a new Seller Details (and you can have several), click on the Seller Details link.
