How to use the selection boxes/buttons to enable customers to choose colour/size etc

Hi!

I am needing the ability to give customers a choice of colours available and size choice.

Eg Colours: Black or Grey
Sizes available: S, M, L, XL
This should be able to be done using the buttons/text boxes etc, but I can't find help on how to do this!
Also - if a size isn't available -eg no S in Grey Marl is it possible to be able to state 'Not available'?
