In need of advice on Listing Variations please

I'm trying to list a product where I'd like the buyer to be able to opt for an add-on item - I've seen listings like that for, say, a phone case that offers the option to add a stylus, a screen protector, or just buy the case with no accessory.

In this case I have a product, 3 each of 3 colours, and a choice of 3 gift bags - if I add a variation for no gift bag that makes for 12 variations, but I only have 9 in stock of the main product.

Is there a way around this? Or is it only feasible when one has a substantial stock of the main product? I hope that made sense!
