Templates again...

When i choose a template it has all the item desciption shipping, payment ect laid out from top to bottom, it says I can add details in each section but the only section I'm able to write in is 'item description'? I don't understand, am I missing something? Also when I specify my returns policy it doesn't show when I preview, it has a link at the top of listing but when I click it just says 'check description' which isn't there?? Please help I'm finding this very complicated!
