Is there any way of keeping the shipping details maximized on my master profile?
I don't want to change any of the other details like marketing etc. but I need to specify shipping costs each time.

I don't know that there is a way Lesley - I think you will need to expand that area each time you list. However, unless there is some reason why you will need wildly different costs each time, what about setting up several different Shipping Profiles (for different weights, or different distances, or whatever), and then just select the one you want from the drop down each time?
As Pete says don't believe you can, different shipping profiles is the way I go even if you end up with a variety of masters.
A lot of flexibilty and time saving during the actual listing creation can be achieved with carefully thought out profiles and seller details.
