How to create NEW custom tags (to use in email)?

Hello there,

How can I create NEW custom tags (to use in email)? e.g. if I want to specify "today's date" or 'tomorrow's date", can I create a custom tag of my own and is there any HTML function or something I can use to auto-populate that field?

Well, suppose I want to create a email template that gives the buyer linkl to UPS Tracking page. If I could create a custom tag called 'UPS Tracking#' and if I could assign a value to it every time I want to send an email with UPS tracking link, then

I can create a template link in my custom email that will look like: http://wwwapps.ups.com/etracking/tracking.cgi?tracknums...&InquiryNumber1=[UPS TRACKING# TAG]
