I'm sorry to hear about your frustration experienced, but I'm afraid I am not aware of any technical issues on our side of things that would explain this behavior. As far as I can tell, all of your listings have been created for the eBay US site and it is not even possible to specify Canadian Dollars as your currency when listing to the eBay US site.
I looked through several of your saved listings and I could see USD as the currency and the "Add/Edit Variations" link in all of them that I reviewed, so I'm hoping that there is just an issue with your browser that is causing some data to load incorrectly on your end.
If you are still encountering behavior like this, the first thing I recommend trying that may help is to clear your browser cache and then restart your browser. If the problems persist, I recommend contacting our customer support team by mousing over the "Help" tab within your account and selecting the "File Support Case" option.
