I am unable to change the quantity of an item I am listing. Anyone know why this may be and how I can fix it?

Thanks for posting your question here. It is only possible to specify a quantity of greater than 1 when listing items in the "Fixed Price" format and, as such, the "Quantity" field on the lister page will not be editable when you are creating an "Auction" format listing.
Provided the item in question currently has "Auction" selected in the Sale Type area at the very top of the lister page, you should be able to make the "Quantity" field on the listing editable by selectecting “Fixed Price” as your Sale Type instead.
