If I would change something on my seller detail, will it automatically update it on my current ebay listings? or in case point if I delete something from my seller detail would that reflect on current listings?

I'm pretty sure that once you have listed an auction on eBay, it would have to be revised individually - the auctions do not maintain a live link to your Auctiva profiles, the Profiles are only used to populate a listing during creation. At least, that's my understanding.
So, if I were to add some christmas, holiday blurb to my seller details and then delete it off of seller details after the holiday, I would have to go in and update each listing separately to get it off?
On any listing still active, yes, I don't see it happening any other way.
