Thanks for the clarification. While it is true that you can only choose one Seller Details profile for each listing, you can actually include details for up to all 5 of the sections that can be used (such as Payment, Shipping, etc) in each profile in order to display details for each section you would like to use.
When you are creating a seller details profile, which you can do by mousing over the "Profiles" tab and selecting "Create New" under "Seller Details" you should find 5 tabs on the ensuing page labeled Payment, Shipping, About Us, Contact Us, and Terms of Sale.
Just use those tabs to enter the details that you would like to display in each of those sections that you would like to use in your listings and, when you select that Seller Details profile in a listing, only the sections for which you have saved text will be displayed within the template.
